Welcome to my new blog: Embarrassingly Simple Foods. Ok, not really. But if that was a thing, the posts would be endless. So often I think of a recipe but then I worry that's it not really food blog recipe worthy. Or even worthy of being called a recipe. Is popcorn with olive oil and sprinkle cheese a recipe? Because if it is, it's my favorite recipe and will be the second installment on my new blog ESF. (Just did a quick google search to make sure ESF stand for something violently offensive on Urban Dictionary. All clear, guys.) But the first post will be this grilled cheese. It has 4 ingredients but make no mistake: it will change your grilled cheese eating life forever.
We make a few different savory items at the bakery and one of my all time favorite smells is cheese buns coming out of the oven. (plus it's a prime opportunity to make some jokes about hot buns. I'm 7 and hilarious. It's fine.) A few weeks ago we tested out a cheese bun with cherry peppers and that combination of hot melty cheese and pickled slightly sweet peppers has been on my taste bud memory every minute since then.
It's a combination that I never really would have thought to put together. And even describing it, it might sound a little iffy. But please, please, trust me. This hits all the marks of a perfect sandwich. Pepper jack cheese. Sweet Cherry Peppers. Super crispy, crusty bread. It's spicy, salty, cheesy and just something that you really need to make right now to even understand. And of course, some tomato soup on the side. Grilled cheese just can't exist without it. So there you have it. The simplest combination of the most random ingredients. While it might be embarrassingly simple, it's also insanely delicious. So of course I had to tell you all about it! But you know what's truly embarrassing? How many times I had to type EMBARRASSING before spelling it correctly. Two r's? What is this? It still looks wrong. Ok, go make some grilled cheese!
Sweet Cherry Pepper Grilled Cheese
Makes 4 Sandwiches
| Ingredients |
- 12-16 sweet cherry peppers
- 8 oz. pepper jack cheese, grated
- 8 slices sourdough bread
- 1/4 cup mayonnaise
| Ingredients |
Spread 4 slices of bread with mayo. Place slices mayo side down and top with half of the cheese. Slice the cherry peppers and arrange 3-4 peppers on top of each slice. Top with the remaining cheese. Top each sandwich with the remaining bread slices and spread each with mayo.
Heat a large skillet over medium-low heat. Add the sandwiches and cook until golden brown and melty, about 3 minutes per side.
Cut sandwiches in half and serve immediately.
